
Ok so I know I put the other post as the first thing but in reality it's going to be the second thing but whatever you know what I meant.
For New Years Eve I made champagne cupcakes (got the idea from Pinterest-love that site btw) to take to my parent's house, here's the recipe and some suggestions.
Cupcake Ingredients:
2 3/4 cups all-purpose flour
3 tsp. baking powder1 tsp. salt
2/3 cup butter1 1/2 cups white sugar
3/4 cup champagne (I used Korbel)
6 egg whites
Champagne Buttercream Frosting Ingredients:
3 1/4 cups powdered sugar1 cup butter, at room temperature
1/2 teaspoon vanilla extract
3 tablespoons champagne, at room temperature
Directions
Cupcakes:
Preheat oven to 350 degrees F (175 degrees C). Prepare a cupcake pan with liners. (This recipe yielded about 20 for me.)
In a large bowl, cream together butter and sugar until very light and fluffy. Sift flour, baking powder, and salt together, and then blend into creamed mixture alternately with champagne.
In another large clean bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into batter to lighten it, then fold in remaining egg whites. Fill the cupcake liners about 2/3 full.
Bake at 350 degrees F (175 degrees C) for 20 minutes, or until a toothpick inserted into the cake comes out clean.

**I noticed these cupcakes were very dry I think next time I make these I'm going to try just a boxed white cake mix and then frost them with the champagne frosting**

With an electric mixer, beat together sugar and butter. Mix on low until well blended, and then on medium for another two minutes. Add vanilla and champagne, beating on medium for another minute. I used sugar pearls for decoration

**I added more champagne than the recipe calls for because come one you can never have too much champagne...well ok you can but whatever...and it also wasn't the consistency I wanted so I just added a tiny bit at a time until it was**
I was also wondering the other day if I could substitute any other fizzy beverage in either one of these so I was thinking maybe a soda in the frosting or something like that...Mmmmmm vanilla cupcakes with Strawberry Crush in the frosting. It would be a super cute color of pink and taste like strawberry (duh).
